Abstract: The following KB outlines the basic guidelines on the smooth running of the restaurant at Samma Karuna in Koh Phangan, Thailand.

All sauces and other dishes in the table below should be preprepared and stored in the fridge with a label with the expiry date on it. When making each ingredient or dish calculate the expiry date according to the table below and write it on the sticker. No ingredients to be used or dishes sold past the expiry date.

  • The shift starts at 8am and finishes at 7pm. 
  • Restaurant opening hours are from 9am – 7pm

The following should be done before opening the restaurant between 8-9am: 

  • Connect the speaker and start playing music from Spotify account on the tablet. Choose grounded radio station from the list. 
  • Turn on the lights, sweep the floor and clean the dust if needed. 
  • Turn on coffee machine
  • Fill in the balance sheet with today’s date and number of dishes prepared to be displayed. 
  • Put cash in the till 
  • Bake 4 croissants in the morning and learn the best number to bake per day as time pass by. 
  • Start by making 1-2 wraps of each kind, so 5-10 in total and display them in the restaurant fridge.
  • Prepare 1 each of Chia Puddings, Chocolate Cake (at least half of chocolate cake should be displayed) and Power Balls (minimum 5) to display.

The following tasks to be completed between 6-7pm: 

  • Check the stock of all ingredients and make a list of items to buy next morning if needed.
  • Clean and turn off the coffee Machine 
  • Offer wraps and chia puddings with 50% discount to people around, volunteers and members of staff.
  • Wraps that are not sold are to be kept in the fridge overnight and offered free of charge to permanent members of staff the next day. 
  • Store the chocolate cake and power balls in the fridge 
  • Clean and turn off the fridge 
  • Clean the kitchen, tun off all lights when leaving 
  • Turn off the music and keep the speaker and the tablet inside the kitchen
  • Count the cash in the till, calculate the total balances on the spreadsheet and check against cash in the till. Balance on the spreadsheet needs to be equal to balance in the till. 
  • Record dishes wasted on the balance sheet
  • Leave the money box in the office and lock the office door. 
  • If there are no people in the restaurant, turn off all fans and lights. 

General Guidelines

  • The expiry date of the sauces should be checked before the end of each day. New sauces should be prepared next morning and stored in the fridge if need. 
  • Wraps are to be displayed cold. We only toast them when the customer orders it and always check with customer if they want it heated up. Mango Wrap and avocado hummus wraps do not need to be heated up when serving, however always ask the customer how they would like it. 
  • Up till 3pm always make sure that we have 1 wrap of each kind displayed in the fridge. After 3pm only make new wraps if ordered by customer and try to upsell what we have available in the fridge. 
  • Falafels are to be prepared and stored in the freezer. Only bake them when customer orders. We should have at least 5 available at any time. 
  • We should always have a minimum of half chocolate cake, 5 power balls and 1 each of Chia puddings displayed. 
  • Chocolate cake and power balls can be kept for 8 days; Put a sticker with expiry date every time you make them. On the 8th day, unsold chocolate cake and power balls can be given to permanent members of staff free of charge.  
  • A special 40% discount is offered to all permanent staff members during restaurant opening hours. 
  • When serving a wrap, add a bit of fresh salad, selected sauce and sweet potato fries. Make the presentation nice. 
  • For Take away we offer wraps and coffee only at the moment 
  • We should always have a minimum of 2-3kg ice in the freezer, at least half loaf of bread and a minimum of 6 panini breads. 
  • Bananas should be cut in pieces and stored in the freezer
  • Do not keep anything inside plastic bags in the fridge. Everything needs to be either wrapped in paper or in separate plastic containers
